ingredients

  • 2 pounds carrots, peeled
  • ½ cup brown sugar
  • 4 TB unsalted butter, cut into small cubes
  • 1 tsp salt
  • ½ teaspoon pepper
  • ½ teaspoon cinnamon
  • 4 LaClare Creamery Maple Bourbon Goat Cheese, crumbled
  • 1 TB fresh thyme leaves

Candied Pecans:

  • 2 TB butter
  • 3 TB maple syrup
  • 1 TB brown sugar
  • 1 cup pecan halves, roughly chopped
  • ¼ tsp kosher sea salt

directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper. Place carrots in a single layer and evenly distribute butter over carrots. Sprinkle with brown sugar, salt, pepper, and cinnamon. Bake for 60 minutes, turning several times.
  2. Prepare candied pecans while carrots are roasting. Melt butter in a small saucepan over low heat. Then add the maple syrup, brown sugar, and pecans. Stir for about 2 minutes until the mixture thickens. Remove the candied pecans from the heat and stir in the salt. Set aside.
  3. Once the carrots are finished roasting, place on a serving dish and sprinkle with the candied pecans and Maple Bourbon Goat Chevre Cheese. Garnish with fresh thyme leaves.
