ingredients

  • 2 bulbs of garlic
  • 1 TB olive oil
  • 2 lb potatoes, cut into similar sized pieces
  • 6 oz LaClare Goat Cheddar cheese, shredded
  • 4 TB unsalted butter
  • ¾ cup heavy cream or whole milk
  • 3 TB fresh chives, minced
  • Salt and pepper

  1. Preheat oven to 350F. Slice off tops of garlic bulbs and remove any loose paper. Do not remove all paper. Coat bulbs with olive oil and tightly wrap in aluminum foil. Roast for 45-50 minutes until cloves are golden brown. Remove from oven and let cool.
  2. In the meantime, add potatoes to a large pot and fill with salted water to cover an inch above potatoes. Bring to boil and cook until potatoes are fork-tender, about 20 minutes. Drain potatoes.
  3. Add potatoes to the bowl of a mixer fitted with paddle attachment or large bowl for hand mixing. Squeeze garlic cloves into potatoes, careful to not add any paper to mixture. Mix for one minute to break down potatoes. Add Goat Cheddar, butter, and heavy cream. Mix on low for 2 minutes. Add chives, salt, and pepper. Mix until no chunks remain. Taste and season with salt and pepper as needed.
  4. Spoon potatoes into serving dish and top with additional chives.
