  • 6 eggs
  • 4 pieces bacon
  • 1 TB olive oil
  • 1 TB olive oil
  • ½ cup LaClare Goat Jack cheese, shredded
  • Salt and pepper
  • 1 avocado, diced
  • 4 TB salsa
  • 2 TB cilantro, chopped
  • 4 flour tortillas


  1. Preheat oven to 400F. Bake bacon on a foil-lined tray for 18 minutes or until crisp. Rest on paper towel.
  2. Whisk eggs in a bowl. Season with salt and pepper.
  3. Heat olive oil in pan on medium heat
  4. Add eggs to pan. Cook until soft and cooked through
  5. Assemble tacos by adding eggs, Goat Jack Cheese, avocado, salsa, and cilantro
