Candied Bacon with Goat Cheese and Hot Honey Crostini

ingredients

Candied Bacon:

  • 1 pound thick-cut bacon
  • 1 tablespoon fresh ground black pepper
  • 1 cup light brown sugar, packed

Crostini:

  • 1 baguette
  • 2 tablespoons butter, melted
  • Salt and black pepper

  1. Preheat oven to 375°F.
  2. Place a wire rack on a foil lined baking sheet. Arrange the bacon on the wire rack and sprinkle with the black pepper. Lightly sprinkle a thin layer of brown sugar on top of the bacon.
  3. Place the baking sheet in the oven and bake for 25 minutes, or until the brown sugar has melted and the bacon is crisp.
  4. While the bacon is cooking, cut the baguette into 1/2-inch slices and place on a baking sheet cut side down. Brush each with melted butter.
  5. Once bacon is done, remove from the oven and increase oven temperature to 425°F. Transfer the bacon to a parchment-lined baking sheet and allow to cool to room temperature. Break bacon into pieces.
  6. When oven reaches 425°F, place crostini in oven and bake for 7-10 minutes or until they are crisp and golden brown. Remove from oven and let cool to room temperature.
  7. To assemble, spread the Fig & Honey Goat Cheese on each crostini, top with candied bacon pieces, and drizzle with hot honey.
