ingredients

For Mexican Crema::

  • ½ cup sour cream
  • ½ tsp lime zest
  • 2 tsp lime juice

For Pizza::

  • 1 lb ground chuck
  • 1 oz package taco seasoning
  • 12 oz unbaked pizza dough, room temperature
  • 15 oz can refried beans
  • ¼ cup salsa
  • 6 oz LaClare Goat Cheddar Cheese, shredded
  • Shredded lettuce
  • Chopped fresh cilantro
  • Pickled sliced jalapenos, optional
  • Crushed blue corn tortilla chips, optional

directions

  1. Preheat oven to 400F.
  2. Stir sour cream, lime zest and lime juice together in a small bowl; set aside.
  3. Cook ground chuck in skillet over medium-high heat until browned; drain grease. Add taco seasoning and water per package instructions. Simmer until thickened; remove from heat and set aside.
  4. Press dough out into a 12-inch round circle on a pizza pan that has been coated with nonstick cooking spray. Bake for 8 to 10 minutes or until slightly browned; remove from oven and let cool on rack.
  5. Stir refried beans and salsa together in a bowl. Spread 1 cup* over the pizza crust.
  6. Sprinkle with taco meat and Goat Cheddar Cheese. Bake until cheese melts, about 12 to 14 minutes. Remove from oven and let cool for 5 minutes.
  7. Sprinkle with lettuce and cilantro. Drizzle with Mexican crema. Serve with pickled jalapenos and crushed blue corn tortilla chips, if desired.

You will have extra refried beans, reserve for another use.
