Swicy Salmon with Lemon Bar Goat Cheese

ingredients

  • 1 ½ pounds fresh salmon filets, skin removed
  • ⅓ cup brown sugar, packed
  • ¼ cup water
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • ¼ cup soy sauce
  • 1 TB lemon juice
  • ½ tsp red pepper flakes, or to taste
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 4 oz LaClare Creamery Lemon Bar Goat Cheese

directions

  1. Place the salmon filets in a shallow dish.
  2. In a bowl, combine brown sugar, water, olive oil, red wine vinegar, soy sauce, lemon juice, red pepper flakes, onion powder, and garlic powder. Mix until sugar is dissolved.
  3. Pour the marinade over the salmon to cover evenly. Cover and refrigerate for a minimum of 2 hours.
  4. After the salmon has marinated, line a broiling pan with foil and place the salmon on the prepared pan. Reserve a ¼ cup of marinade. Transfer the remaining marinade to a saucepan.
  5. Turn the broiler on low.
  6. Place the salmon in the oven about 6 inches from the broiler. Broil for 5 minutes.
  7. While the salmon is cooking, simmer the remaining marinade for about 10 minutes until it thickens and reduces by one-third.
  8. Add the LaClare Creamery Lemon Bar Goat Cheese to a blender. Whip the cheese in the blender.
  9. After the first 5 minutes of broiling, brush salmon with reserved marinade. Broil for another 5-10 minutes and brush two more times with the marinade. Salmon is done when the fish is no longer bright red and flakes easily with a fork.
  10. Drizzle cooked marinade over salmon and top with LaClare Creamery Lemon Bar Goat Cheese just before serving.
