our ingredients

For the salad:

  • 5 cups baby spinach
  • 4 oz LaCLare Goat Feta cheese, crumbled
  • ½ cup walnuts, chopped
  • 1 cup pomegranate seeds
  • 1 large avocado, sliced

For the dressing:

  • 5 TB extra virgin olive oil
  • 2 TB champagne vinegar
  • 1 TB lemon zest
  • 1 TB lemon juice
  • 1 ½ TB Dijon mustard
  • Salt and pepper

the instructions

  1. Mix salad ingredients together in a large bowl.
  2. In a food processor, add vinegar, lemon zest, lemon juice, Dijon mustard, pinch of salt and pepper. Pulse until combined. Slowly drizzle in olive oil while mixing until the mixture has emulsified. Add more salt and pepper to taste.
  3. Top salad with dressing.

Dressing can be prepared up to one day in advance. Shake well before topping salad.
