ingredients

  • 3 sweet potatoes, diced
  • 1 TB extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 4 oz LaClare Creamery Chipotle Honey Goat Cheese, crumbled
  • 2 avocados, sliced
  • Hot honey, for drizzling

  1. Preheat oven to 425°F
  2. In a large bowl, toss sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Spread sweet potatoes onto a parchment-lined baking sheet in a single layer.
  4. Roast 25 minutes, turning halfway, or until tender and slightly caramelized.
  5. While the sweet potatoes are roasting, brown the ground beef. Drain excess fat.
  6. Add taco seasoning, following the packet instructions.
  7. Remove potatoes from the oven.
  8. Assemble bowls: Divide sweet potatoes evenly into four bowls, top with ground beef, avocado slices, LaClare Creamery Chipotle Honey Goat Cheese, and a drizzle of hot honey.
  9. Serve immediately.
