Roasted Potato Wedges with Spicy Goat Cheddar Cheese Sauce

Everyone enjoys roasted potato wedges as a tasty side dish, but pairing them with this spicy Raw Goat Cheddar Cheese sauce makes this side rival any entrée.

  • 3 large potatoes, each cut into 8 wedges
  • 2 TB extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Cheese sauce:


  1. Preheat oven to 425°F. In a large bowl add potatoes, oil, salt, and pepper. Spread evenly onto baking sheet and cover with foil and bake for 30 minutes. Remove cover, turn potatoes, and bake for 10 more minutes or until lightly browned.
  2. For the sauce, heat butter in a medium saucepan. Add flour and stir over medium heat for 30 seconds. Add milk a little at a time and stir until thickened. Reduce heat to low; stir in Raw Cheddar Goat Cheese, green onions, and pepper.
  3. Transfer sauce to a dish and serve with roasted potato wedges.
