Roast Beef Eggs and Smoked Goat Cheddar Sandwich

ingredients

  • 2 large eggs
  • 1 tablespoon milk
  • Salt and pepper
  • 3 tablespoons butter
  • 2 small baguettes
  • 6 ounces Smoked Goat Cheddar cheese, shredded
  • 6-8 slices of roast beef
  • 4 slices cooked bacon
  • 2 tablespoons Dijonnaise

directions

  1. Preheat a large frying pan over medium heat.
  2. In a small bowl, add eggs and milk together, whisk until well blended. Season with salt and pepper.
  3. Add 1 tablespoon of butter to frying pan. Once melted, add the egg mixture to the skillet.
  4. Cook until eggs begin to set around edges, about 30 seconds, then use a spatula to gently lift around edges, allowing uncooked egg to flow to center. Once set, remove from pan and set on a plate. Cut the eggs in half.
  5. Slice baguette in half lengthwise. Butter each side with a 1/2 tablespoon of butter. Add each slice to frying pan and heat until warmed or slightly brown.
  6. Remove from pan. Flip bottoms over, top each with equal amounts of shredded Smoked Goat Cheddar cheese and slices of roast beef. Then add on half of each of the eggs and cooked bacon. Dress with Dijonnaise. Place baguette tops on to finish.
