  • 5 oz spring green mix
  • 3 peaches, sliced
  • ½ small red onion, very thinly sliced
  • 1 avocado, diced
  • 4 oz LaClare Creamery Honey Goat Cheese, crumbles
  • ½ cup raw shelled pistachios

For dressing:

  • 2 TB balsamic vinegar
  • 1/3 cup extra virgin olive oil
  • ½ tsp Dijon mustard
  • 1 garlic clove, minced
  • ¼ tsp salt


  1. Prepare the dressing, by combining balsamic vinegar, extra virgin olive oil, Dijon mustard, and salt in small bowl.
  2. Heat a small skillet over medium heat. Toast the pistachios, stirring occasionally, for about 5 minutes until lightly toasted. Remove from the heat and set aside to cool.
  3. In a large bowl add the spring green mix and drizzle with the desired amount of dressing and toss to combine. Top with peaches, red onion, avocado, Honey Goat Chevre Cheese crumbles, and pistachios. Toss to combine and serve immediately.
