ingredients

For dressing:

  • 1/4 cup sliced red onion
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon olive oil
  • Kosher salt
  • Fresh ground black pepper

For Salad:

  • 8 pieces citrus, such as oranges, blood oranges, and/or grapefruit
  • 1 fennel bulb, fronds removed and thinly sliced
  • 1 tablespoon thinly sliced fresh mint
  • 2 ounces LaClare Goat Feta Cheese, crumbled

directions

  1. Place red onion in a bowl of ice water. Let sit while you prepare the salad.
  2. Whisk vinegar and mustard together in a small bowl. Slowly drizzle in olive oil, whisking until well combined. Season with salt and pepper; set aside.
  3. Carefully cut off peel from citrus to remove the pith, then cut into 1/4-inch slices. Remove any seeds.
  4. Drain ice water from onions and add to dressing.
  5. Create a layer of citrus slices and fennel on a platter. Drizzle with dressing. Sprinkle with mint and Goat Feta Cheese before serving.
