ingredients

  • 3 tablespoons vegetable oil
  • 5 dried guajillo chiles, stemmed, seeded, and finely chopped
  • 2 garlic cloves, chopped
  • 8 ounces (2 logs) Chipotle Honey Goat Cheese, crumbled
  • Salt and pepper to taste
  • Cilantro sprigs, for garnish

directions

  1. Preheat oil in a medium size frying pan over medium heat. Add in chiles and garlic and cook until garlic is fragrant, about two minutes. Remove from heat and let sit for 10 minutes.
  2. In a food processor, place Chipotle Honey Goat Cheese, salt, and pepper. Spoon out the chili and garlic mixture and half of the oil from pan to food processor. Blend until smooth.
  3. Transfer to a serving bowl, garnish with cilantro and serve with tortilla chips, crackers, or veggies.
