  • 1 lb ground pork
  • 2 oz LaClare Goat Pepper Jack cheese, cubed into 8 pieces
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 clove garlic, grated
  • 2 tsp Italian seasoning
  • 1 egg
  • ⅛ cup breadcrumbs
  • Olive oil


  1. Preheat oven to 400F. Line baking sheet with parchment paper
  2. In a bowl, mix ground pork, salt, pepper, grated garlic, Italian seasoning, egg and breadcrumbs until combined
  3. Divide into eight portions. Place one Goat Pepper Jack cube in the center of each portion. Seal meatball completely.
  4. Place meatballs on baking sheet. Lightly brush with olive oil. Bake until cooked through, about 20 minutes. Cool for 5 minutes before serving.
