  1. Crack the eggs into a bowl. Add a pinch of salt and black pepper, then beat the eggs with a fork until they are well combined.
  2. Heat butter in an 8-inch, nonstick skillet over medium-low heat.
  3. Once butter is melted, add the eggs to the skillet and cook without stirring until the edges begin to set. With a silicone spatula, push the edges toward the center of the pan and tilt the pan so the uncooked eggs move to the edge. Repeat until the eggs are set but still a little soft in the center.
  4. Add the goat cheese and herbs on one side of the omelet. Gently fold the other half over the top and cook for 1 minute until the egg is fully cooked.
  5. Remove it from pan, add to a plate and serve immediately.
