  • 8 slices whole grain bread
  • 4 ounces Mediterranean Goat Cheese, at room temperature
  • 2 avocados, halved, pitted, peeled, and sliced
  • 1 large cucumber, sliced
  • 2 teaspoons fresh lemon juice
  • 1 cup arugula
  • Salt and pepper to taste


  1. If preferred, toast bread slices in toaster.
  2. Spread 1/2 ounce of Mediterranean Goat Cheese evenly on each bread slice.
  3. Top one slice with cucumbers and avocado slices. Drizzle with fresh lemon juice and season with salt and pepper to taste.
  4. Add arugula and place the second slice of bread on top, goat cheese side down.
  5. Serve immediately.
