ingredients

  • 1 package puff pastry, defrosted
  • 1 TB extra virgin olive oil
  • 1 large tomato, sliced ¼ inch thick
  • 1 medium yellow onion, diced
  • 2 cloves garlic, grated
  • 2 TB white wine
  • ½ tsp fresh thyme, minced
  • 4 oz LaClare Garlic & Herb Goat Cheese (chèvre), at room temperature
  • 2 TB fresh basil, julienned
  • Salt and pepper

directions

  1. Remove goat cheese from fridge to come to room temp. Preheat oven to 425F.
  2. Heat oil in large skillet over medium heat. Add onions and garlic. Sauté for 10-15 minutes, stirring frequently. Add wine, salt, pepper, and thyme. Cook until onions are browned, and no moisture is left in pan, about 15-20 minutes.
  3. Unfold two sheets of puff pastry on a floured surface. Using a 6-inch plate, cut two circles per sheet. Place circles on two parchment-lined baking sheets.
  4. Using a sharp knife, score a border ¾ inch from edge of each circle. Using a fork, prick the inside score of each circle.
  5. Spread Garlic & Herb Goat Cheese and onion mixture on each circle within the border. Place a slice of tomato on the center of each tartlet. Brush each tomato with olive oil and sprinkle with salt and pepper.
  6. Bake for 20-25 minutes, until the pastry is golden brown. Sprinkle baked tart with fresh basil and serve.
