Ingredients:

  • 8 oz LaClare Chipotle Honey Goat Cheese
  • 1 lb ground chuck
  • Salt and pepper
  • ½ large onion, thinly sliced
  • 2 TB salted butter, softened
  • 4 Brioche buns, split

Instructions:

  1. Cut each log of Chipotle Honey Goat Cheese in half. Place each half on a small piece of plastic wrap and seal tightly. Press down on each until a patty of cheese forms. Return to the refrigerator while you prepare the burgers.
  2. Divide ground chuck into four equal balls.
  3. Preheat cast-iron griddle or stainless-steel skillet over medium heat.
  4. Place beef balls on surface; using a heavy metal spatula, press down on each ball to create a thin patty. Season with salt and pepper. Arrange about ¼ cup thinly sliced onions on top. Cook for about 2 minutes.
  5. Flip burgers over, there should be a nice brown crust on the patty. Season with additional salt and pepper and cook for another 2 minutes.
  6. Meanwhile, butter each half of the buns and lightly toast.
  7. Remove cheese from refrigerator and unwrap. Place one patty of cheese on each burger. Cover and cook until cheese melts, about 1 to 2 minutes.
  8. Serve burgers on buns.
