Chicken with Raw Goat Cheddar and Peppers

ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper
  • 2 TB all-purpose flour
  • 1 ½TB olive oil
  • 3 bell peppers of various colors, sliced into strips
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1 TB dried oregano
  • ½ tsp red pepper flakes
  • 24 oz marinara sauce
  • 4 oz LaClare Raw Goat Cheddar cheese, shredded
  • 2 TB flat leaf parsley, chopped

directions

  1. Preheat oven to 350F
  2. Season chicken with salt and pepper and dredge in flour, shaking off excess.
  3. Heat 1 TB olive oil in skilled on medium-high heat. Cook chicken until done, about 10 minutes. Remove chicken from skillet.
  4. Heat 1 TB olive oil in skillet on medium heat. Add bell peppers, garlic, shallot, oregano, and red pepper flakes. Sauté until shallot is translucent and peppers are softened, about 4 minutes. Add marinara sauce and chicken to skillet. Top with shredded Raw Goat Cheddar.
  5. Put skillet in oven until chicken and sauce is warmed and cheese is melted, about 5 minutes.
  6. Remove from oven. Top with parsley.
