  • 8 oz LaClare Goat Cheddar cheese, cut into pieces
  • 1 cup all-purpose flour
  • 4 TB unsalted butter, cut into pieces
  • ¾ tsp kosher salt
  • ⅛ tsp cayenne pepper
  • ¼ tsp smoked paprika
  • 3 TB ice water

the instructions

  1. Put Goat Cheddar, flour, butter, salt, cayenne and paprika into a food processor. Pulse until texture becomes very fine.
  2. Add water to the mixture and pulse until dough forms
  3. Form dough into a ball, wrap with plastic wrap and refrigerate for 1 hour.
  4. Preheat oven to 350F. Line a baking sheet with parchment paper
  5. Roll out dough to 1/8-inch thickness. Cut into squares using a knife or pizza cutter and poke a small hole in the center of each square with a skewer or toothpick.
  6. Using a spatula, place squares on baking sheet, half inch apart
  7. Bake until squares are crisp, about 20 minutes. Transfer crackers to wire rack to cool completely. Store in airtight container.
