ingredients

Dressing:

  • 4 ounces LaClare Original Goat Cheese
  • 4 tablespoons water
  • 1 tablespoon mayonnaise
  • 1 tablespoon white wine vinegar
  • 1 tablespoon olive oil
  • 1⁄2 teaspoon kosher salt
  • 1/4 teaspoon coarsely ground black pepper

Salad:

  • 4 tablespoons chopped cilantro
  • 4 carrots (12 ounces), peeled and shredded (3 1/2 cups)
  • 1 apple, cut into 1/4-inch sticks
  • 6 ounces LaClare Goat Mozzarella, cut into 1/4-inch sticks
  • Crusty French bread (optional)
  • Lettuce leaves (optional)

directions

  1. Combine the dressing ingredients in a blender and puree until smooth.
  2. Add the carrots, apples, and Mozzarella to a bowl and pour in dressing.
  3. Mix gently until well combined.
  4. Cover and refrigerate for a few hours to soften the carrots slightly.
  5. Serve the salad with crusty bread or spoon it onto lettuce leaves.
