Caprese Salad

One of our favorite salad recipes from our café menu. The combination of roasted tomatoes, basil pesto, and LaClare Goat Mozzarella draws inspiration from a traditional caprese.

ingredients

  • 1 (5 ounce) package of spring salad mix
  • 2 tomatoes, sliced and roasted
  • 12 ounces grilled chicken breast, precooked and sliced
  • 1/2 cup prepared pesto
  • Balsamic glaze
  • 1 cup Goat Mozzarella, shredded
  • Fresh cracked pepper, optional

directions

  1. On a serving plate, add salad mix.
  2. Arrange roasted tomato slices and grilled chicken slices on top of salad mix.
  3. Drizzle with pesto and balsamic glaze.
  4. Top with shredded Goat Mozzarella and fresh cracked pepper (if desired).
  5. Serve immediately.
