ingredients

  • 2 cups whole milk
  • ¾ cup heavy cream
  • 1 TB lime zest
  • 2 large eggs
  • 2 large egg yolks
  • ½ cup white sugar
  • 2 TB cornstarch
  • 10 ½ oz LaClare Blueberry Vanilla Goat Cheese (chèvre)
  • 2 TB unsalted butter
  • 2 tsp lime juice
  • ¼ salt
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • ½ cup fresh strawberries, sliced

directions

  1. In a saucepan over medium-high heat, combine milk, heavy cream, and lime zest. Bring to a simmer. Remove from heat and let cool for 30 minutes.
  2. In a medium bowl, whisk eggs, egg yolks, sugar, and cornstarch until smooth. Temper the egg mixture with 2 TB of the milk mixture. Slowly whisk remaining milk mixture into the egg mixture. Pour all contents back into the saucepan and bring to a bowl over medium-high heat, whisking constantly, until thickened.
  3. Transfer the custard to a blender. Add Blueberry Vanilla Goat Cheese, butter, lime juice and salt. Blend until smooth. Pour into individual dishes or molds. Refrigerate for an hour, until chilled.
  4. Top with blueberries, raspberries, and strawberries
