ingredients

  • ½ cup salted butter room temperature (1 stick)
  • 8 oz cream cheese room temperature (1 brick)
  • 1½ cups granulated sugar
  • Zest of 1 lemon
  • 1 large egg
  • 2 tsp vanilla extract 
  • 2 ¾ cups all-purpose flour 
  • 1 TB baking powder
  • ½ tsp salt
  • Cinnamon
  • Powdered sugar
  • 8 oz LaClare Rolled Blueberry Vanilla goat cheese
  • Crunchy salt

directions

  1. Cream butter, cream cheese, sugar, and lemon zest. Mix in egg and vanilla until fully combined.
  2. Mix in flour, baking powder, and salt separately.
  3. Fold dry mixture into the wet mixture, do not over mix.
  4. Roll dough into a log and wrap with plastic wrap. Chill in fridge for 30 minutes.
  5. Preheat oven to 360 degrees.
  6. Unwrap dough and slice into ½ inch thick cookies.
  7. Coat in cinnamon and powdered sugar (to your liking).
  8. Bake for 8-10 minutes until the edges are slightly golden brown.
  9. Slice LaClare Rolled Blueberry Vanilla goat cheese into ¼ inch rounds. Press goat cheese into middle of baked cookies. Sprinkle with crunchy salt and serve.
