ingredients

  • 16 oz package gnocchi
  • 3 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 2 TB fresh basil, chopped (plus extra for garnish)
  • ⅛ tsp red pepper flakes
  • 2 TB extra virgin olive oil
  • 4 oz LaClare Creamery Garlic & Herb Goat Cheese
  • 1 tsp sea salt
  • ½ tsp pepper

directions

  1. Preheat oven to 425°F.
  2. In a large bowl, combine gnocchi, tomatoes, garlic, basil, and red pepper flakes. Toss to coat.
  3. Place LaClare Creamery Garlic & Herb Goat Cheese in the center of a baking sheet or large casserole dish. Add gnocchi and tomato mixture to the sheet/dish.
  4. Roast in the oven for 30 minutes.
  5. Remove from oven. Season with salt and pepper and toss to combine the gnocchi and tomatoes with goat cheese to create a creamy sauce. Garnish with basil and serve immediately.
