ingredients

  • 3 TB unsalted butter
  • 1 leek, thinly sliced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 5 large eggs
  • ½ cup heavy cream
  • 1 TB fresh chopped dill
  • ½ tsp ground Himalayan pink salt
  • ¼ tsp ground pepper
  • 8 oz LaClare Creamery Garlic & Herb Goat Cheese, room temperature
  • Fresh dill sprigs, optional

directions

  1. Preheat oven broiler.
  2. Melt butter in 9-inch cast-iron skillet over medium-high heat. Add leeks and asparagus; cook until just softened, about 8 to 10 minutes.
  3. Whisk eggs, heavy cream, chopped dill, salt, pepper, and Garlic & Herb Goat Cheese in a medium-size bowl until smooth.
  4. Pour egg mixture over vegetables and cook until almost set, 3 to 4 minutes.
  5. Transfer skillet to preheated broiler. Cook until golden brown on top, about 2 to 4 minutes. Watch carefully to prevent burning.
  6. Remove from oven to a cooling rack. Let stand for 10 minutes before slicing and serving. Garnish with additional dill sprigs, if desired.
